The 23-year-old began his career at Arsenal before joining Brentford, making two appearances in the Championship and one in the Premier League.
He went on loan to Oxford United in 2023-2024, making 43 appearances in all competitions as the U's won promotion from League One.
"Obviously we went all the way, which was an unbelievable achievement for me and the club," Stevens told BBC Radio London.
"It's a tough league now, especially with the teams that have come down (Leicester, Sheffield Wednesday and Oxford Utd) and the teams that have come up (Notts County, MK Dons, Cambridge Utd and Bromley).
"There are always teams with a bit more money, and those with a bit less, but it's just how we go up against them, and we're going to give anything."
Stevens left Brentford in 2025 to join Bundesliga side St Pauli, but made just two appearances over two seasons, before securing the move to Orient.
"I gave it a good go out there," Stevens added.
"Obviously everyone saw it didn't really to go to plan as I wanted it to. I just want to try get going again and enjoy my football.
"I got to speak to Richie (Wellens, O's manager) and liked everything about him, and the direction the club wants to go in. It just seemed like a perfect fit.
"He's demanding and gets the best out of his players, and that's what both me and the team needs this season."
Orient were almost promoted to the Championship in 2024-2025, losing the League One play-off final, and then avoided relegation on the final day last season.
"Everyone at the club knows that we need to do better than we did last season," Stevens said.
"Everyone's in the right place now, and we need to be right at it from the first game.
"The gaffer's demands are game by game, give it everything and we'll see where we end up. I think we've got lots of quality to be up and around it."
Stevens won two caps for Wales in 2024 and hopes this move to the O's can reignite his international career.
"The main thing to get around the international set-up is to get games," he added.
"I saw last season there were players from League One in and around the team.
"I think it's definitely possible, if I can get playing and perform well and show what I can do I can get back around it."
